Cook them in the crockpot then when it's close to being done. Put some sour kraut on top of it. Serve it with mash potatoes and apple sauce, then some rye bread
I would use one to make cutlets. Thinly slice the roast then pound them even thinner. Dredge them and pan fry and keep them warm in a roasting pan until you eat.

Family pot roast cooked with red and green bell peppers onion adding carrots and potatoes last couple hours.
I always cook mine in the crockpot all day or overnight. The broth makes good gravy so first meal is always mashed potatoes, gravy, corn. Some of it gets BBQ’d, sometimes open faced sandwiches, it also freezes really well after it’s cooked.
I favor an old Italian recipe that requires a marinade made of beer, onion, garlic, stalk of celery, carrot, and fresh herbs. When cooking, use a bit of the marinade and add more celery and carrots + mushrooms. herbs

One pork loin to one jar of green salsa (mild preferred, medium--the hottest as it amplifies as it cooks). Slow cook for 8 hours and pull apart. Pulled pork!! Serve on good rolls. Maybe with some coleslaw and pickles...
Cut x in the out side top, pot fresh garlic in each x. Cover with granulated garlic and season salt. Cook at 359 for a few hours until inside next to bone reaches desired temperature. I cook uncovered. I like the outside a little on the crunchy side. To each their own. Makes good roast and sandwiches afterwards
