I season with salt, pepper, garlic powder, thyme & coat lightly with flour, sear in a little oil on all sides in a cast iron Dutch oven then set aside. I mix together a couple packages at aujus, brown & mushroom gravy mix (Dry packages) with water, beef broth & worcestshire then add to Dutch oven put roast in sauce & make sure completely covered in sauce. You can add a little red wine & jarred beef gravy also . Cover with lid & cook 30-44 minutes on 425 then turn down to 350 & cook 3-4 hours until fork tender. I add cut carrots the last hour & make garlic mashed potatoes or you can add potatoes to it while cooking. I also add onion & garlic cloves at beginning.
