@feliz I've found the secret to roast is low and slow and if it doesn't fall apart you didn't cook it long enough.
I've turned many roasts into pulled pork or pork sammiches bc I wasn't patient enough or a waited to ling to start it. Not every is gonna wiat that long, but honestly time is the factor. I start mine at 8am. If by noon I don't feel like it's cooking fast enough I turn it up to high for 2 to 4 hours, then finish on low again.

I have a way to cook a roast that is always tend. The secret is to use a slow cooker bag and instead of pulling the bag down the side of the crockpot, fold it back over the roast.
I use McCormick stew packet and 2 cups of diet Dr Pepper to mix the packet in. If you don’t have Dr Pepper you can use beef broth. However, a pop product is better. The answer is the slow cooker bag!

Chuck roast should be tender, because it's a well marbled piece of meat. I've found it works the best ❤️
I just made one with
1.5 cups beef broth
1 packet ranch mix
1 packet brown gravy
1 packet Italian dressing mix
Mix those and pour over the roast. Cook on low for 8 hrs...you can add veggies around the 5hr mark, that gives them 3 hrs to get tender.

Lipton onion soup mix, 2cups water, put in oven on 325 to 350 depending on oven for 3hrs. It will fall apart literally
