My Garden Zucchini is Overflowing – Need New Dinner Recipes!

Calabasitas con puerco o pollo
Squash with 2-3 lbs pork or chicken
4 Squash (any but I prefer zucchini)
1 Onion (diced)
1-2,Tomato (diced)
2-3 Bay leaves
1 Can of corn
Season with salt, pepper, cumin, & garlic powder,
Cube your choice of meat and sear in Dutch oven or lg pot. Add 1-2 cups of chicken stock, & bay leaves and simmer until meat is almost cooked. Add your veggies. Boil until veggies are tender and meat is cooked. Add more stock for soupier dish. Adjust seasoning to taste
 
zucchini and onions layered in rows drizzle with olive oil, season with salt and pepper and rosemary topped with parmesan cheese bake at 375 for 45 minutes it's really good
 
I put it in everything. It adds a veggie but you literally can’t tell it’s there. I Shred it and add it to my spaghetti, chili, goulash, stew, (I know a lot of those are winter meals sorry) I also cut some up and froze it for when we do stir frys.
Ohh make kabobs. Cuz then you can use big chunks. You can do chicken and beef and marinate everything differently for options.
 
Wow and I forgot zucchini boats. One thing we Do often.
I cook my ground turkey, add all The seasonings then add some shredded and drained zucchini.
cook that down a little bit. Add some
Tomato paste cook thag down a little bit then add your marinara.
Scoop out boats and load with your sauce. Bake with cheese on top. Serve with noodles and Marinara. So light but filling. Perfect for a summer night
You could even grill the boats. (BecUse screw the oven in the summer) and then add your turkey sauce mixture on top of boat after it’s grilled
Or use air fryer if you have one to keep the house cooler
 
Shredded zucchini (1 or 2 dependinghow much you want), chicken breast cubbed (again id say 2 but its what you like), 1 box stuffing, can of cream of chicken and 1 can water. Mix all together and bake 400 for 45 min (until chicken is cooked). Your zucchini will add some water but just keep an eye it isn't to dry.
 
it's good grilled...also I shred it..sprinkle with salt and let it draw out the moisture..take the zucchini and mix with egg... mozzarella and parmesan cheese...put on pizza pan and bake til lightly browned...then top with pizza sauce and whatever toppings you like and of course more cheese and bake til hot and browned.
