Throw chicken thighs in the crock pot with EVOO and almost any kind of seasoning. Always comes out great
 
Go to the grocery store earlier in the morning. They mark meat down and you can get other cuts or kinds beside chuck roast. They you can cook variety
 
Chicken crockpot special
4 chicken breast chopped, chopped onion and 2 tablespoons of minced garlic, 2 tablespoon chicken bouillon & 2.5 cups water, 2 packet Fiesta Ranch mix (by the salad dressing), 1 pound pinto beans soak over night and boil on high one half hour, 2 can Rotel, 2 can corn not drained, 2 block cream cheese. On high in the slow cooker for 4 hours or 6 on low. Add 1 1/2 cups rice the last hour. I eat with Doritoes Oh. My. Heavens!!! Easy to freeze.
 
Salsa chicken over rice. You can do it in oven or crockpot but it’s literally just chicken and dump a jar of salsa in crockpot over it . I serve it over rice and melt shredded Mexican cheese over top
 
Oven quesadillas are cheap and simple. Tortilla, cheese of choice, mine is a mozzarella provolone blend, with meat of choice, and veggies of choice. Just fold over and bake at 325-350 for 16-20 mins. You can spritz cooking oil but I’ve noticed it doesn’t necessarily need it to get nice and crisp…. I won’t pan fry ever again.
 
Cheap roast
Pk brown gravy
Can potatoes
Can carrots
Beef broth
Put roast on low night before in crockpot with broth and brown gravy
Next morning add potatoes and carrots
When ready to eat add a slurry to thicken the gravy
 
Homemade pizza dough is easy. It can be left in the refrigerator for a couple of days. Bring to room temperature, cover with a jar of sauce, mozzarella, pepperoni. Bake. Filling, cheap, fresh. Lettuce, cucumber, spinach salad on the side.
