Maybe switch to chicken and ground turkey? Less expensive and better for your health. I do a lot of roasted veggies and rice but also pasta is cheap. I do chickpea pasta for added protein
Lots of options with these ingredients. You can also do breakfast foods for y’all meals. Spinach and feta omelette with red peppers is a go-to in my house for cheap meals
Put a couple of cans of green beans, a peeled onion, four peeled or washed potatoes and a pound of smoked sausage in a crock pot or large pan. Cook till the potatoes are fork tender. One whole meal, only one dirty pot to wash.
You can batch cook meat or non meat proteins and serve over rice or in a wrap
Rotisserie chicken and sides - use leftover meat and bones for soup 
Breakfast - toast your way or scrambled eggs on toast is a classic
Microwave or boil bags of veggies to add on the side .

@seymour2 I do this sometimes too for my lunch. Chicken, mixed with mayo, shredded cheese and bacon bits and spread it on bread. But ofc, whatever you prefer mixed into the chicken.
Sheet pan dinners are so easy, a quick Google will find you a bunch but basically you throw a sheetpan with whatever peotien you want, veggies, and seasoning and just roast it. Mini meatloaves wrapped in. Acon, you can make comfort sides like stuffing or mashed potatoes and add a side salad. Bagged saladsmake it easy.
Goulash, My way
Add or subtract ingredients per your taste.
1# cooked pasta of choice
1# ground beef chopped up with
1 onion and 1 green pepper chopped and brown the 3 together with seasonings of choice, drain.
Garlic to taste
Italian seasoning to taste
Adabo seasoning to taste
2 cans stewed tomatoes chopped up rinse cans with a little water to get all the juice
1 - 11 oz can V8 juice rinse can with a little water
2 Tbsp Worchestershire sauce
1 can corn drained at the end, OPTIONAL
Toward end add 1 stick butter or oleo
If tomatoes are sharp add a touch of sugar
Heat and serve with a few sprinkles of favorite shredded/grated cheese
*Later, if pasta absorbed the liquid add another can V8 juice

Noodle tuna or chicken - my way
1 lb egg noodles cooked
1 can tuna or chicken drained & shredded (or regular cooked chicken shredded)
1 can peas or corn or green beans drained
2 cans cream of celery or chicken soup (or 1 of each)
3/4 can of milk in each can scrape sides
1 stick butter or margarine
Pepper to taste
Heat (do not boil) all together
