Pioneer Woman Mashup Potatoes
INGREDIENTS
• 5 lb. russet or Yukon Gold potatoes
• 3/4 с. butter
• 1 package (8 oz.) cream cheese, softened
• 1/2 c. (to 3/4 cups) half-and-half
• 1/2 tsp. (to 1 teaspoon) Lawry's Seasoned Salt
• 1/2 tsp. (to 1 teaspoon) black pepper
DIRECTIONS 1. Peel and cut the potatoes into pieces that are generally the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook for 30 to 35 minutes. When they're cooked through, the fork should easily slide into the potatoes with no resistance, and the potatoes should almost, but
not totally, fall apart. 2. Drain the potatoes in a large colander. When the potatoes have finished draining, place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all
the steam to escape, before adding in all the other ingredients. 3. Turn off the stove and add 1 ½ sticks of butter, an 8-ounce
package of cream cheese and about ½ cup of half-and-half. Mash, mash, mash! Next, add about ½ teaspoon of Lawry's
Seasoning Salt and ½ a teaspoon of black pepper. 4. Stir well and place in a medium-sized baking dish. Throw a few
pats of butter over the top of the potatoes and place them in a 350-degree oven and heat until butter is melted and potatoes are warmed through.
 
I cook my potatoes….drain….put potatoes back in hot pan….add lots of butter, package of cream cheese…beat with a mixer until blended….if they are too stiff I I’ll add heavy cream…..just a little at a time till there where I like them I like my potatoes to hold my gravy…lol. I also add salt and pepper when mixing….
 
I don't have a specific recipe but here's some things I've learned about homemade mashed potatoes:
•peel the potatoes and boil them whole. You may be tempted to cut them up to reduce cooking time. Don't. That makes them watery. Just make sure the boiling water or broth fully covers them and be prepared to give them plenty of time to cook.
• You can cook them in water but chicken broth is good too.
• Once they're soft you're going to drain them and mix in a little milk or cream. You can use milk, half and half, or heavy cream. Heavy cream is the best, if you opt for milk use whole milk. But no matter what you use, pour some in a cup and set aside at the beginning because you want it to be room temp when you mix it in.
• Use plenty of butter throughout the whole process.
• Season however you like, but make sure you add a pinch of salt and some black pepper. I also add Parmesan and herb seasoning and garlic powder to mine.
