Budget-Friendly Meal Ideas for 2 Adults & 1 Toddler: Quick, Easy Recipes with Leftovers

Cabbage, kielbasa and new potatoes. Cut up cabbage and kielbasa. You can leave potatoes whole of they are not really big. Put in a big pot and at enough water to cover. If you have Goya ham seasoning put in 4 packs. Salt and pepper. ♥️
 
STUFFED ZUCCHINI BOATS
INGREDIENTS
4 medium zucchini
1/2 teaspoon dried Italian seasoning
salt and pepper to taste
2 teaspoons olive oil
1 pound mild Italian sausage casings removed
1/2 cup onion finely diced
1 teaspoon minced garlic
2 cups marinara sauce
3/4 cup shredded mozzarella cheese
1 tablespoon chopped parsley
cooking spray
INSTRUCTIONS
Preheat the oven to 400 degrees F. Coat a large rectangular baking with with cooking spray.
Cut the zucchini in half lengthwise, then trim off the stem ends. Use a spoon to carefully scoop the flesh out of the zucchinis.
Sprinkle the Italian seasoning, salt and pepper over the zucchini shells. Arrange the zucchini in the baking dish.
Heat the olive oil in a large pan over medium high heat. Add the sausage and cook for 4-5 minutes, breaking up the meat with a spatula.
Add the onion and cook for an additional 4 minutes or until onion is softened. Add the garlic and cook for 30 seconds.
Season the sausage and vegetable mixture with salt and pepper.
Pour the marinara sauce into the pan and bring to a simmer; cook for 5 minutes.
Spoon the meat mixture evenly into the zucchini shells, then top with the shredded cheese.
Bake for 25 minutes, or until zucchini is tender and cheese is melted and golden brown.
Sprinkle with parsley, then serve.

Ham and Cheese Quiche is made with a simple pie crust, eggs, ham, cheese and milk. Only 10 minutes of prep for this delicious quiche recipe that is perfect for brunch or breakfast.

Ingredients
1 frozen or refrigerated pie crust
4 large eggs
1 cup diced ham
1 cup shredded cheddar cheese
¾ cup milk
Salt and pepper
¼ cup chopped parsley for garnishing
Instructions
Preheat the oven to 325°F170C .
Leaving the pie crust in its foil case, place the pie crust on a baking sheet and bake for 10 minutes. If you use a pre-made pie crust that is not already in a foil pie tin, you can gently press the crust into a pie pan before placing on a baking sheet to bake.
While the pie crust is baking, make the filling. In a large mixing bowl, add the eggs, diced ham, shredded cheese and milk. Whisk together until well combined. Season to taste with salt and pepper and continue to whisk.
Pour the filling into the baked pie crust. Bake for 30 minutes, or until the quiche is golden and set in the centre.
Garnish with the chopped parsley and serve.
 
Crockpot Italian Chicken 4 chicken breasts
1 packet Zesty Italian dressing seasoning
8 oz. cream cheese (softened)
2 cans cream of chicken soup
2 tablespoons of garlic powder
1 package of pasta
How to make it :
Add all the ingredients except the pasta into the crockpot. Cook on low for 4 hours. If sauce is too thick, add a little milk.
When you are ready to serve the chicken, cook pasta according to package. Drain pasta.
Add pasta to the chicken sauce in the crockpot and toss together.
 
Crockpot Ham, Green Beans and PotatoesIngredients:
1 pound of boneless ham, cut into bite-sized pieces
1 pound of fresh green beans, trimmed
1 pound of baby potatoes, halved or quartered
1 onion, diced
3 cloves of garlic, minced
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
1 teaspoon of paprika
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 cup of chicken or vegetable broth
Instructions:
Place the ham, green beans, potatoes, onion, and garlic in the crockpot.
In a small bowl, mix together the thyme, rosemary, paprika, salt, and black pepper. Sprinkle the seasoning mix over the ingredients in the crockpot.
Pour the broth over everything in the crockpot.
Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, or until the potatoes are tender and the green beans are cooked to your liking.
Serve hot and enjoy!

Do you some breakfast egg sausage or bacon, optional cheese anything else you want on it scrambled into the eggs toaster English muffin put it on top of there and enjoy you can always make extra to freeze. I have to do is take it out and warm it up.
 
ingredients for Homemade Hamburger Helper.
1 lb ground beef or ground turkey, sometimes I use only 1/2 lb
1/2 cup onions, diced
1 tablespoon butter, optional
2 cups milk
1 cup cold water
2 cups elbow macaroni, uncooked
1/2 teaspoon sugar
1 teaspoon salt or seasoning salt
1/4 teaspoon black pepper
3/4 teaspoon oregano
3/4 teaspoon parsley
3/4 garlic powder
1/2 teaspoon chili powder
1 teaspoon paprika
2 cups cheddar cheese, shredded
Instructions
Brown ground meat in a skillet over medium heat until almost done.
Add in onions and cook until tender.
Drain fat from pan.
Add remaining ingredients except for the cheese.
Stir to combine.
Bring to a boil.
Reduce heat, cover and cook until pasta is tender, about 10 minutes. Stirring occasionally.
* Do not over cook pasta. I usually taste check it at 9 minutes.
Remove from heat and stir in cheese. The sauce may be thin.
Let pasta sit to thicken the sauce, meanwhile adjust seasonings if needed.
Serve and enjoy.

I don’t know if you have an Aldi but they have pulled pork already done. Add some bbq & put cheese on a pack of Hawaiian rolls, spread bbq over, and toast if you want.
 
Make a list of what is on sale,. Design your menu from that. Pulled pork. Make carnitas a few days later. Hamburger. Make goulash or spaghetti or both. Chicken pulled sandwich and tacos. Make million dollar spaghetti. You just have to make a menu for what is on sale

My man loves tuna casserole...me not so much until I learned to spruce it up!!
1 box Velveeta shells n cheese
1 can tuna
1 can mix veggies
1 handful (or as much as you like) shredded cheese
Chick-fil-A sauce to taste (I usually use 1/4 cup)
Stir! Stir! Stir! (After Mac n cheese is made first obviously and everything else is added)
Can feed a family of 4. So with 2 adults and a toddler, you can definitely get lunch left overs.
I usually add butter bread or garlic bread with it, if I have it.
Taste amazing!!
 
Spaghetti, could do baked penne noodles or stuffed shells the next days or use the sauce for chicken Parmesan
Tacos and make baked nachos next day.
Crock pot Alfredo chicken, could to stuffed shells and or penne
Grilled chicken, or crockpot taco/salsa chicken use left overs for chicken quesadillas.
 
I’m sure you’re aware of this but the biggest thing that got our bill down was shopping at cheaper places like Aldi, who don’t have red dye 40 in any of their brand foods which is awesome or even Save a Lot. Not sure if you have these but I save half the money of milk for one to the next and the list goes on.
 
boneless chicken, jar of salsa, in crock on med for 2 hours, shred chicken return to crock and stir. then you can make tacos, enchiladas, tator tot casserole! A roast beef, put in crock with 1 beer and season as you like. cook all day on high, add water after 3 hours to cover all meat, 1.5 hours before serving add potatoes and carrots. serve with gravy or as is, then you have lots of left over meat for almost anything that calls for beef, including great lunch meat!

1 can tuna or chicken drained & shredded
1 can peas or corn drained
2 cans cream of celery or chicken soup (or 1 of each)
3/4 can of milk in each can scrape sides
1 stick butter or margarine
Pepper to taste
