Lime-cilantro rice bowls, topped with black beans, diced avocado, pico de gallo, shredded cheese, tortilla strips, etc. Squeeze a slice of fresh line over everything and serve.

Sliced chicken (breast or thigh. I do thigh)

Onion (optional)
Sautéed up with salt and pepper. Serve with tortilla, sour cream, and salsa
 
Pizza bagels - plain bagel, spread a little pizza sauce, top with pepperoni or favorite topping, add mozzarella cheese and bake until cheese is melted. Filling and cheap. Can also use pita bread or naan instead of bagel.
 
2 pound bag of homestyle meatballs, but in pan on stove, add one can jellied cranberry sauce, one jar chili sauce and 1/4 cup brown sugar. Stir, cover and cook for time on meatball directions
 
Rotisserie chicken, take chicken off bone. Spray casserole dish with cooking spray. Mix chicken, 2 packs Stovetop stuffing, 2 cans cream of chicken and a cup of milk. Bake covered at 350 for 20-25 min.
 
Look up the "Good and Cheap" cookbook by Leanne Brown. There's a free PDF version online. That got me through uni when I was walking 3km from the shop to my flat! Super easy and good with some fancier recipes for parties or special occasions!
 
Augrautin potatoes with cubes ham in them; knorr creamy chicken rice with pan cooked chicken (season with Mrs Dash original) and broccoli: chicken breast, onions, and peppers cut into strips toss in a little bit of oil and fajita seasoning and bake covered at 350 for about 40 minutes, Serve on flour tortillas. All freeze well.
 
The store usually sales premade bbq ribs for like $11 you just reheat and they can make a baked potato in the microwave to go with it.
 
Easy Chili:
1 lb. burger
1 small, diced onion
1-14.5 Oz. can kidney beans
1-28 Oz. can diced tomatoes
1 packet chili seasoning
Brown burger and onions. Add rest of the ingredients and simmer for 20 minutes. I like shredded cheddar on top. I like it with Jiffy muffins on the side.
 
Take 2 pkg chicken ramen soup, boil noodles in 2 lg. carton chicken broth. Spice yourself, or add those spice packets. Cut up one chicken breast or two thighs, sauté in a separate pan. You can add onion, mushrooms, or whatever else you like to the sauté. When done, add that to the noodles, then add one small package frozen broccoli. Cook until broccoli heated through. This is super easy, less than $15, makes about 5-6 pints and is better next day because the noodles absorb the liquid and it becomes like a stew. Serve with some nice rolls and butter.
 
Knorrs has some yummy foods available in pouches. Easy to carry home and easy to prepare. Their Mexican rice is s favorite at our house. Also Zaderains has great red beans and rice. Also Auntie Chuns has good things that can be microwaved. My family loves Campbells Chucky soup served over sticky rice.
 
I have a microwave pasta / rice cooker. $10 at Walmart. 5 cups of water, 2 boxes of Uncle Ben’s Original Brown Rice with the spice envelopes, cut up sausage links OR add browned ground meat and 1/2 to 1 stick of butter. Mix and microwave for 30 minutes. One pot dish. Perfectly cooked rice every time. We also sometimes add a cup of frozen mixed vegetables to try to get more veggies.
 
Pumpkin muffins:
1 box spice cake mix
Cinnamon (2-3 TBSP)
1 can pumpkin puree
Mix all 3 ingredients together, put or pipe (using a zip lock bag) into cupcake or loaf pan. Bake according to directions on the cake box.
