Looking for Easy, Cheap, and Delicious Recipes for College Students

My grandmother made a casserole that you could freeze portions and defrost a portion and heat up. Chicken with veggies and gravy. We served it on what we had. Mashed potatoes or rice, even noodles.
 
@shirei, that sounds good can you tell us how she made it. With ingredients and steps. Most of these kiddos are very book smart but very little knowledge on how to cook and temperature to cook at.
Example one thought to toast bread just need to set oven to broil for 10 minutes. Yeah, that didn't go good and caused them to test out the smoke alarms, which worked fine but my daughter said 6am for alarm check was too early 🙄
 
@daughtermolly let me get back to you. Give me a bit. I was the third to last out of the grand kids. 7 before me. Grandma had it portioned and frozen for the trip and it was put in the freezer when she got there. In Tupperware even. We knew she wanted it back too.
 
The recipes look great! Encouraging words I shared with my daughter-participate whenever she could with roommates and classmates. Meaning if asked to study join. It’s tough for them and for you too. Best as you adjust!
 
I call it goulash
A pound of either ground beef or sausage a package of pasta whatever kind you prefer and salsa, I usually add 2 pints cause I don’t like it dry and serve. If you like you and sprinkle with some shredded cheese
 
Pizza at Home
Ingredients for crust:
1 cup self rising flour
2 eggs
2/3 cup milk
1 teaspoon of salt
1 teaspoon Italian seasoning
Dash of pepper
Other ingredients:
Pizza sauce
Cheese
Toppings of choice
Directions:
Preheat oven 375.
Mix Flour, eggs , milk and spices together and pour onto a 10×15 Jelly Roll Pan or baking sheet. ( Spray with Pam) Spread evenly, covering the entire surface. Bake 3-7 minutes, until just set.
Add pizza sauce, can add in a little sugar to the sauce , to cut the bitterness.
Add toppings of your choice and cheese. ( if making veggie pizza, salte in a little oil to cook the veggies a bit.)
Cheese
Return to oven, bake until cheese is melted.
 
Other than the ground meat, this meal is all shelf stable - plus open and dump! So easy!! It’ll feed a crowd too.
Taco Soup
1 lb ground meat
1 can pork n beans - do not drain
1 can ranch beans - do not drain
1 can white northern beans - do not drain
1 can whole corn - do not drain
1 can rotel - do not drain
1 can diced tomatoes - do not drain
1 packet taco seasoning
1 packet ranch seasoning
In large pot, brown meat until cooked. Dump all beans, tomatoes, corn, and seasonings into the pot. Add water to consistency of choice. Let simmer and enjoy!
Can add so many different toppings too if they feel fancy: shredded cheese, sour cream, tomatoes, onions, avocado, tortilla chips, Fritos
 
Easy Chicken Alfredo with Broccoli
-boil any kind of pasta you like. Last minute or two of cooking, toss in cut up broccoli. Drain and put back in pan.
-add Alfredo sauce and rotisserie chicken or baked chicken or sauteed chicken.
-add a little milk if it's too thick
Garlic bread pizza
-garlic Texas toast
-sauce (I really like Contadina pizza sauce in the squeeze bottle)
-any toppings you like and mozzarella or Italian blend cheese.
-bake as directed on the bread package
Sheet pan dinners
-any type of protein cut up
-any veggies cut up
-olive oil and seasoning of choice.(I really like Cajun or pepper and seasoned salt)
-toss together, spread on pan and bake about 20-30 mins @ 350.
-serve as is or over rice
Chicken BBQ wraps
-sautee sliced onions and peppers until crisp tender
-add in rotisserie chicken or baked or sauteed chicken
-add any kind of BBQ sauce until it's all covered
-serve as a burrito or tacos
 
One of the best meals I learned at that age: take a box of pasta roni, a can of canned chicken (the size of a tuna can) and fresh or frozen spinach thawed and squeezed dry.
Open the chicken and pour the broth into the measuring cup and then add the milk to the box directions. Cook to the box directions after it’s done add the chicken and spinach and mix it together.
 
Check out the book clueless in the kitchen. It has a bunch of easy receipts, basic cooking/baking tips and tips on putting together meals. It was one of my favourites when I moved out and the brownie recipes is still my go to
 
* Texas toast pizza
* Biscuit pizzas
* Spaghetti
* Baked chicken and rice (you can get the fully cooked chicken breast and just heat and eat)
* tacos
* nachos
* quesadillas
 
Mexican Pizza. Serves 1-2
Cook 1/2 lb hamburger with 2 TBSP Taco seasoning
2-4 tortillas
1/2c refried beans
1/2c salsa
1/2c shredded cheese
Place tortilla on sheet pan. Spread layer of refried beans. Add another tortilla on top. Bake at 350 degrees for 10 minutes. Remove from oven. Add salsa, cheese, or any other toppings (tomatoes, jalapeño peppers, black olives, etc) Return to oven until cheese melts.
Hamburger Quesadilla
Cook 1 lb hamburger
Mix 1/2 c Ketchup, chop small onion, & chop up pickles. Mix ketchup, onion & pickles together. Heat skillet. Spray with nonstick spray. Spread ketchup mixture on tortilla. Heat tortilla. Put hamburger on tortilla, top with cheese. Fold tortilla over & cook on other side.
Turkey Rollups
Sliced deli turkey
Box stove top stuffing
Jar of turkey gravy
Cook box of stovetop stuffing as directed. Warm up gravy. Once stuffing done. Take a slice of turkey & lay flat. Place some stuffing on slice and roll up. Place on small baking dish. Repeat until you make as much as you want or until you have used all turkey. Pour gravy over turkey rollups & place in oven until warmed through.
 
@daughtermolly good evening to you. As a mom of a daughter who in college as a senior and has some of the similar rules and regulations. If it is a University - typically not. If it is a tech school sometimes they will allow. Or at least in my state is how we’ve seen it. My daughter is a senior in college and has two more years.
 
@daughtermolly as a previous Residential Assistant (RA) for a college dorm - most universities will not allow any item with heating elements in dorm rooms. So no toasters, insta pots, crockpots, air fryers, etc.
