Cabbage fritters made the same way as potatoe pancakes add cut up ham or left over pork it's a complete
meal. So good as a side also
 
Grease baking sheet. Cut cabbage into wedges or steaks. Pour olive oil over them and add salt, pepper, paprika, garlic and onion powder and bake 350degrees until browned and cooked through and caramelized. According to the thickness, May cook longer. Delicious!
 
TexMex Cabbage
Serves 6
Ingredients
1 whole cabbage
1/2 cup beef broth
1 pound lean hamburger
1/2 onion, chopped
1 pkg (1oz) taco seasoning mix
1 small can (8 oz) tomato sauce
1 tsp garlic powder
Salt and pepper, to taste
Chopped cilantro, to taste
1/2 to 1 cup shredded cheddar, to taste
Sour cream, to serve
Remove the outer leaf or two of the cabbage and discard. Rinse the cabbage head well. Thinly slice the cabbage and add to a large skillet over medium-low heat. Pour beef broth over and stir occasionally.
In the meantime, brown and drain the hamburger. Add the chopped onion to the drained beef and cook for just a few minutes, or until onion is translucent. Add the taco seasoning mix, tomato sauce, garlic powder, salt and pepper, and chopped cilantro. Mix well.
Add the hambuger mixture to the skillet with the cabbage and mix together. Continue to cook over medium-low heat until cabbage shrinks and gets tender, stirring occasionally.
Sprinkle the shredded cheddar cheese over the cabbage mixture and cover for about 15 minutes, or until cheese has melted. Serve with sour cream, if desired.
 
Mexican Style Cabbage Skillet

1/2 head of cabbage chopped
1 lb of Ground Turkey or hamburger meat
1 can of rotel or diced tomatoes if you like it less spicy
1 packet taco seasoning or 2 T of your homemade taco seasoning
Brown hamburger, drain. Sauté chopped cabbage in 2Tbs of butter until tender. Add the beef to the cabbage, taco seasoning, can of rotel and half can of water. Simmer until liquid is absorbed.
 
Got a request for my Cheesy Meatloaf
My cheesy meatloaf will feed 6-8 and takes a couple minutes to prep. Perfect for dinner and leftovers will get us through some lunches during the week ahead that is if there are any. Maybe make two.
You'll need-
•2-lbs ground chuck
•1-cup of minced onion
•2-minced garlic cloves
•1/2-cup minced celery
•1/4-cup minced carrot
•1-cup shredded provolone
•1/2-cup grated Parmesan
•1/4-cup of tomato paste
•1-large egg
•1-tsp freshly ground black pepper
•1/2-cup bread crumbs
•1/2-cup minced parsley
Topping-
•1/2-cup of tomato paste
•2-tbs brown sugar
•2-tbs red wine or balsamic vinegar
1-In a bowl add all of the ingredients (except the topping) and mix well by hand.
2-Form into a loaf place on a baking sheet lined with parchment paper.
3-mix the topping ingredients together and spread on top, cover loosely with foil
4-Place in a 375 degree pre heated oven until done about an hour.
5-Allow the meatloaf to rest for 10 minutes before enjoying

Ingredients
1 large cabbage.
2 small onions diced
2 cans of stewed tomatoes.
1 pouch Lipton Onion Soup Mix any flavor.
1 large celery chopped very small.
Ground beef
Directions
Fill a large saucepan halfway with water, bring to a boil, then add the vegetables, then bring to a simmer.
Cook 1-2 pounds of burger separately draining any fat.
Add any spices you like and Lipton soup mix.
Add the meat, simmer for a few more minutes then taste 😋
This soup is great for all of us, especially on rainy days!
