@pualanina this was just diagnosed 2 weeks ago and mom is floundering as well. It has been a huge struggle because she was already a picky eater and now all of the meals and items she would eat are now off limits. Mom has been giving rice/potatoes and baked meat for 2 weeks now and I'm trying to help show there are other more nutritious options than just that. There isn't an Aldi or whole foods within 2 hrs so everything has been very limited with Walmart the largest and only non local grocery. The school has even said she must bring a lunch everyday.

My friend, whose son had a milk allergy always said it’s not what he can’t have, it’s what he can have. Here is a vegan gluten-free banana bread that is amazing! No milk no eggs nondairy chocolate chips. Everyone absolutely loves it.

In a separate skillet, coat bottom with a little oil & lightly toast your pasta or rice. Add your onion & bell pepper, ( I cut big pieces so the onion haters can remove)
Then add in your tomato sauce. Give it a little stir and add 2 cups of water. While waiting for it to come to a boil add in your choice of meat. When it comes to a boil
Cover and simmer 12 minutes- 15 minutes for rice. Turn off heat and remove from heat source. Leave covered for an additional 10 minutes if using rice. Serve with refried beans and tortillas.

Brown hamburger meat & drain. add the veggies & seasoning 1/2 cup of water & simmer until potatoes are tender. Serve with refried beans & flour tortillas

Sloppy joes, spaghetti, shepherd's pie, hamburger patties with gravy and rice, breakfast for dinner (pancakes, sausage and grits), hamburgers and fries, grilled chicken breasts, veggies and rolls.

Avoid Walmart brand ingredients in your meals for the allergy child. They have a huge cross contamination issue and even if it’s something simple like rice they don’t always clean the facility well enough and there can be traces of dairy. I’m all for saving money but for our allergy child we avoid Walmart brand.

Ask the parents for recipes and ask what kind of seasonings you can use a lot of them have things that we would never think they did in them ~ wheat

I use fairlife milk. If you have a Kroger, their lactose free no sugar ice cream is good! Carbmaster yogurt. Gluten free pancake made with fairlife milk. I use gluten free panko crumbs in place of breadcrumbs. They make good chicken tenders.Barilla gluten free pasta is my fav. We buy gluten free pizza crust and use dailya plant based cheese. I have yet to find a good gluten free bread.

Rice products fruit salads veggies there are so many gluten dairy free options out there vegan cheeses that are as good as real. We eat this way normally so if you need ideas recepies hit me up

Corn shell tacos, just make sure to not use a taco mix unless it's gluten free. Vegetables steamed and roasted chicken.

TACOS. Literally eat tacos/nachos/burritos so often, just don't add cheese or get the vegan kind. Also stir fry, stuffed peppers, roast beef and potatoes, grilled chicken salad, etc. Basically think whole foods and life becomes a lot easier.

Grilled steak or chicken with green beans and roasted carrots and potatoes. Sheet pan chicken rice bowls. Taco bar with corn tortillas.
