Need Budget-Friendly Meal Ideas: Tired of Chuck Steaks & Pasta - Looking for Cheap, Nutritious Recipes!

Do you have a Senior Center in your area? In my town it is $8 to join for a year. They offer hot lunches for $3/person. And have all kinds of free activities/lectures.
There is also a community food bank offering items, no questions asked.
 
Buy a pound of dry red beans and a jiffy corn muffin mix. Soak them overnight and cook them all day in your crockpot. I didn’t put any seasoning in mine, just salt to taste when you eat. They were delish and you can easily get two meals out of it. If you have a tomato or onion, it’d taste good on the side.
If you like them, try them the next time mixed in with rice and onion….could add some Cajun seasoning.
 
Super cheap and filling:
Shepherd's Pie
Brown 1 lb ground meat (your choice)
With onion and peppers, garlic s/p
Drain and pour into casserole dish.
Drain can of cut green beans, pour over meat.
One can, undiluted, of soup- cream of something or (my fav) tomato over the beans.
Mashed potatoes, can be pkgd- over the soup.
Bake 350° about 30 minutes until bubbly at edges.
 
We love breakfast for dinner. So filling and cheap! Scrambled eggs, sausage and toast! Invest in a crock pot if you don't have one. We do pulled BBQ chicken in the crockpot for sandwiches!
 
Roasted veggies:
Cut everything into same size chunks.
1 lb Smoked sausage
Peel and Pre- cook in micro the (4-5) potatoes and (3 lg) carrots partially.
Onion, peppers, frozen broccoli spears.
Toss in oil with S/P/G and and other seasonings you like.
Put all in a large baking dish.
Bake 375° for 45 minutes until potatoes are completely tender.
 
Buy an off brand of dressing mix, whatever chicken pieces that are on sale, and a can of cream of chicken soup. (Mushroom or celery soup works, too).
Spray your crockpot with oil and dump in the dry dressing. Spoon the soup over it and add chicken pieces on top (salt & pepper). Cook it on low for several hours until the chicken is done. I use bone in with skin on so the juices cook into the dressing.
It is really good and couldn’t be easier.
 
Get a couple cans of chicken soup and add some more chicken (rotisserie is easiest and cheap), add a slurry of lite cream and corn starch to thicken. Can add a puff pastry crust or pie crust for chicken pot pie or can just pour over mashed potatoes or rice.
 
With your Chuck steak have you did
Half freeze it and slice it thin for hoagies with peppers and onions. Ot lettuce and tomatoe
Cut it into chucks and put it in crock pot with gravy
Make mashed potatoes
Corn or green beans
To make the green beans
When you cook a few strips of bacon keep the grease and add onions and fry them add green beans garlic powder salt and pepper
Or do onions and peppers with the steak and gravy and put over rice
You can get the onions and peppers already cut up in the freezer section
Pasts with jar of Alfredo with slices of rotisserie chicken
Use the legs of the rotisserie chicken and make mashed potatoes and corn
Gravy use a packet is the easiest
Clean up all the chicken off the bones put bones in a crockpot
After these cook for all day Take out the bones now add celery onions and carrots with butter if the broth did make enough taste
After they cook add noodles
Cut up chicken into slices and make a sandwich
With your soup
 
1 lb hamburger season as you like and cook add 1 can of cream of mushroom soup with a splash of milk cook until hot serve over toast or white rice
 
Cabbage, kielbasa and new potatoes. Cut up cabbage and kielbasa. You can leave potatoes whole of they are not really big. Put in a big pot and at enough water to cover. If you have Goya ham seasoning put in 4 packs. Salt and pepper. ♥️
 
Sausage & cheese muffins.
Easiest recipe ever:
1 cup bisquick mix, 4 beaten eggs, 1/2 tsp salt, (less if you wish) 1 cup shredded cheddar cheese, 1/2 lb ground sausage.
Mix altogether, put in sprayed muffin pan. Bake 20 minutes at 350.

Oven Fried Chicken Legs
Ingredients:
4 chicken legs (drumsticks and thighs)
1 cup buttermilk
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
1 cup all-purpose flour
1 cup breadcrumbs
Cooking spray or olive oil
Instructions:
Marinate the Chicken:In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.
Add the chicken legs to the buttermilk mixture, ensuring they are fully coated.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for the best results.
Preheat the Oven:Preheat your oven to 400°F (200°C).
Prepare the Coating:In a shallow dish, combine the all-purpose flour and breadcrumbs.
Remove each chicken leg from the buttermilk mixture, allowing any excess to drip off.
Roll each chicken leg in the flour and breadcrumb mixture, pressing the coating onto the chicken to make it stick. Place the coated chicken on a wire rack set over a baking sheet.
Bake the Chicken:Lightly spray or brush the chicken legs with cooking spray or olive oil. This will help them become crispy in the oven.
Place the chicken in the preheated oven and bake for about 45-55 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature of the chicken should reach 165°F (74°C).
Serve:Once the chicken is done, remove it from the oven and let it rest for a few minutes before serving.
 
Easy Shepherd’s Pie
Ingredients
1 lb of browned and seasoned ground beef
2 cups of hot mashed potatoes (I used ones already made)
½ package of cream cheese (4 ounces)
1 cup of shredded cheddar cheese
2 cloves of garlic (I used the minced garlic)
4 cups of frozen vegetables (that have been thawed)
1 cup of beef gravy in a jar
How To Make Shepherd’s Pie
Preheat oven to 375F
Mix potatoes, cream cheese, garlic, and ½ of the shredded cheese together
Mix the mixed vegetables, gravy, and meat together
Put the vegetable, meat, gravy mixture into a 9″ square baking dish
Cover vegetable mixture with the mashed potato mixture
Take the remaining ¼ cup of shredded cheese and cover the potatoes
Bake uncover in the preheated oven for 20 minutes
